The albariza soil, renowned for its high chalk content and exceptional ability to retain moisture, is the foundation upon which the bodega builds its reputation for crafting elegant and expressive wines.
The solera method is a traditional wine aging process that involves a fractional blending system with wine stored in a series of barrels arranged in tiers. Wine from the oldest barrels (closest to the ground) is periodically bottled, and those barrels are then replenished with wine from the next oldest tier above. This cycle continues up the series, ensuring consistent style and age by mixing different vintages. The final bottled wine is a blend from various ages, creating a uniform quality and character.
Once the biological aging has begun, and when the winemaker decides its destiny, the wine is once again aged to lose the ‘flor veil’ and move on to oxidative aging. Between the two ageings, it spends more than 7 years in a dynamic system of ‘criaderas and soleras’.
It shows in the glass with an elegant bright amber color. The nose is subtle and forceful, with a predominance of dried fruit and tobacco aromas. The palate is friendly and very complex, with a dry finish and balanced acidity, and an aftertaste reminiscent of oak.
The perfect accompaniment to cheeses of any kind, as well as with spicy dishes.
