Harvest by hand in crates in early September from grapes planted in 1961 and 1986. Vinification in 800l Impruneta Terracotta Amphorae without temperature control. Fermentation is carried out with indigenous yeasts, and the must/wine remains in maceration on the skins for 2 months. After racking, the wine remains another 6 months in amphora followed by an aging period in bottle of at least 4 months.
The result is a medium-bodied skin-contact with distinct aromas of orange peel, peach, chamomile. The palate offers dried herbs, dried apricot, with a light but noticeable salinity. The acidity is crisp, bright, and refreshing with soft but well structure tannins. The feel of Tuscan sun.
Pair it with seafood, light pasta dishes and aged cheeses.
