Another incredibly delicious wine from iconic winemaker Frank Cornelissen, the Belgian-born grower making wine in Etna’s most known volcanic region.
The grapes are destemmed and lightly crushed, with a brief three-hour maceration to lend subtle texture and character. Fermentation begins with a pied de cuve using indigenous yeasts and the wine ages for around ten months in neutral epoxy vessels, preserving its freshness and varietal expression. Made without fining and filtered before bottling, it reflects a restrained approach designed to deliver a lighter-bodied white with distinctive character and sapidity.
Think of a bright golden color on the glass due to the brief skin-contact fermentation (3-hours), giving also a beautiful texture. Expect notes of chamomile, apricot, citrus zest, and some herbal notes. The acidity is crips and well-balanced, the finish is refreshing with the distinctive personality that represents Mount Etna.
Pair it with grilled octopus, hard cheeses, white pizza and great as an aperitif.
Region: Mount Etna, Sicily, Italy
Grape: 40% Catarratto, 30% Carricante, 30% Grecanico d’Orato
Vintage: 2024
