Ignios Orígenes, is another project from Borja Pére that launched in 2011 and who is considered to be one of the winemakers that has contributed the most to the recovery and preservation of indigenous grapes from this regions influenced by volcanic soils and red clay.
Ignios Orígenes Listán Negro VS (Select Vintage) was produced with 100% full clusters and had a long 30-day maceration. Matured in oak foudre for one year, it’s ruby color on the glass, medium-bodied, showcasing aromas of dried flowers and ashy notes. On the mouth, expression of red and black fruits, balsamic notes and warm spices. It’s elegant, with round tannins and an incredible salinity that characterizes the region.
Limited quantity, a must try.
Pair it with grilled red meats, charcuterie, Manchego and sharp cheddar cheeses.
