Fonterenza - Toscana Bianco

Produced by twin sisters Francesca and Margherita Padavoni. This wine comes from sourced fruit from the Tuscan coast, specifically the red sandy soils of Capalbio, where the Padovani sisters know two brothers farming local white varieties organically at sea level.

The fruit is vinified two different ways: one part was destemmed and macerated with the skins for 11 days and the other part was whole-cluster pressed with no skin contact. Alcoholic and malolactic fermentation take place in stainless steel. The two parts were blended and aged six months in tank before bottling without filtration and a small amount of sulfur (a little of which was used at the time of harvest as well).

Ansonica, a unique grape mainly from this region offers citrus aromas and flavors, with herbal undertones. Silky texture and velvet mouthfeel are followed by layers of flavors of peach, honeysuckle, green apple, delicious acidity and saline finish that are combined from the Malvasia, Trebbiano and Vermento. A wine that will give a lot to talk about.

Pair it with oysters, shellfish, creamy risotto and soft cheeses.
